The Ultimate Comfort Meal

Sausage and mash is a timeless comfort dish that proves simple food can be incredibly satisfying. With juicy sausages, creamy mashed potatoes, rich gravy, and sweet green peas, this meal is hearty, filling, and easy to make at home.

Ingredients (Serves 2–3)

For the sausages

  • 4–6 good-quality sausages

  • 1 tablespoon oil or butter

For the mashed potatoes

  • 1 kg potatoes, peeled and chopped

  • 50 g butter

  • 100 ml milk (warm)

  • Salt and pepper, to taste

For the gravy

  • 1 tablespoon butter or oil

  • 1 tablespoon flour

  • 400 ml beef or vegetable stock

  • Salt and pepper, to taste

To serve

  • 1 cup green peas

  • Chopped spring onions (optional)

Method

1. Cook the potatoes
Place the potatoes in a large pot of salted water. Bring to a boil and cook for 15–20 minutes, or until soft. Drain well and let them steam dry for a minute.

2. Make the mash
Mash the potatoes until smooth. Add the butter and warm milk, then season with salt and pepper. Mash until creamy and fluffy. Cover and keep warm.

3. Cook the sausages
Heat oil or butter in a pan over medium heat. Add the sausages and cook, turning occasionally, until golden brown and fully cooked through. Remove from the pan and set aside.

4. Prepare the gravy
Using the same pan, add butter if needed. Stir in the flour and cook for 1 minute. Gradually add the stock, stirring constantly to avoid lumps. Simmer until thick and smooth. Season to taste.

5. Cook the peas
Boil or steam the peas for 3–5 minutes until tender. Drain well.

To Serve

Spoon a generous portion of mashed potatoes onto each plate. Top with sausages and pour over plenty of hot gravy. Add peas on the side and finish with chopped spring onions if desired.
