Slow Cooker Salisbury Steak with Mashed Potatoes

Ingredients

1 1/2 pounds ground beef
1/2 cup breadcrumbs
1/4 cup finely chopped onion
1 egg
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon vegetable oil
1 large onion, sliced
2 cups beef broth
2 tablespoons cornstarch
2 tablespoons water
4 cups mashed potatoes
Chopped chives for garnish

Directions

In a large bowl, combine ground beef, breadcrumbs, chopped onion, egg, Worcestershire sauce, salt, and pepper. Mix until just combined.
Shape the mixture into 4 oval patties.
Heat vegetable oil in a skillet over medium-high heat. Brown the patties on both sides, about 3 minutes per side.
Place the browned patties in the slow cooker.
Add sliced onion to the skillet and sauté until softened, about 5 minutes. Transfer onions to the slow cooker.
Pour beef broth over the patties and onions in the slow cooker.
Cover and cook on low for 5-6 hours or until the patties are cooked through.
In a small bowl, mix cornstarch and water to create a slurry. Stir into the slow cooker and cook on high for an additional 30 minutes to thicken the gravy.
Serve the Salisbury steaks over a bed of mashed potatoes, topped with the onion gravy and a sprinkle of chopped chives.
