Here’s a classic, easy Chicken Broccoli Casserole—comfort food that’s simple and flexible.
Ingredients
2 cups cooked chicken, diced or shredded
2 cups broccoli florets (fresh or frozen, lightly cooked)
1 can (10.5 oz) cream of chicken soup
½ cup milk (or chicken broth)
1 cup shredded cheddar cheese (or cheddar–mozzarella mix)
½ cup sour cream (optional, makes it creamier)
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
1 cup cooked rice or pasta (optional, for a heartier casserole)
Topping (optional but good!)
½ cup breadcrumbs or crushed crackers
2 tbsp melted butter
Instructions
Preheat oven to 375°F (190°C). Lightly grease a baking dish.
In a large bowl, mix soup, milk, sour cream (if using), garlic powder, onion powder, salt, and pepper.
Stir in chicken, broccoli, cheese, and rice/pasta (if using).
Spread mixture evenly in the baking dish.
If using topping, mix breadcrumbs with melted butter and sprinkle on top.
Bake 25–30 minutes, until bubbly and lightly golden.
Let cool 5 minutes before serving.
Easy Variations
Healthier: Use Greek yogurt instead of sour cream and reduced-fat cheese.
No canned soup: Replace soup + milk with 1 cup homemade white sauce.
Extra flavor: Add a pinch of paprika or a little Parmesan on top.
Low-carb: Skip rice/pasta and add more broccoli.
