Ingredients
2 cups cooked chicken, finely chopped or shredded
2 eggs
½ cup all-purpose flour
¼ cup cornstarch (makes them extra crispy)
¼ cup milk
½ cup grated cheese (optional but tasty)
2 cloves garlic, minced
½ small onion, finely chopped
1 tsp salt
½ tsp black pepper
½ tsp paprika or chili powder (optional)
½ tsp baking powder

Instructions
Mix wet ingredients
In a bowl, whisk the eggs and milk together.Add flavor
Stir in garlic, onion, salt, pepper, paprika, and cheese.Add chicken & dry ingredients
Add the chicken, flour, cornstarch, and baking powder.
Mix until you get a thick batter.Heat oil
Heat oil in a pan over medium heat.Fry the fritters
Scoop spoonfuls of batter into the hot oil.
